Zucchini Bread Day?

Yes today is national zucchini bread day. Did we really need a day to celebrate the bread made from the vegetable that most closely resembles a weed? Have you ever seen a monster zucchini? These veggies can grow upwards of 3 feet easily. As much as I am not a fan of growing these odd veggies, I have a soft spot and zucchini bring back good memories for me.

Growing up, both of my parents word, and I spent a great deal of time with my grandmother. She made many treats for me, my favorite was zucchini bread with honey butter. My grandmother didn’t use regular honey butter, she added brown sugar to it. It WAS one of the sweetest and tasteful things I have ever eaten. She knew how to make her bread softer than I have yet to taste bread to this day.

My grandmother past away a few years ago at the young age of 89.
